Miso ramen bowl

Ingredients

For the broth
>> 1 tbsp miso paste
>> 1/2 tsp green chilli paste
>> 1/2 tbsp chicken tare
>> 400 ml vegetable stock

For the sauce

>> For the ramen
>> 1 portion ramen noodles (120-130g)
>> 1 soft boiled egg
>> 100g chicken, tofu, or prawns
>> 5-6 slices of carrot
>> 5-6 slices of mushroom
>> Handful of cut spring onion
>> Sesame oil and seeds (for garnish)
>> Nori sheet (for garnish)

Method

Boil the noodles for 4-5 minutes if fresh, or 7-8 minutes if store-bought. In a bowl, whisk the miso paste, green chilli paste, chicken tare and boiled vegetable stock until smooth. Add the noodles and remaining stock, then top with chicken, tofu, or prawns, carrots, mushrooms and spring onion. Drizzle with sesame oil and garnish with sesame seeds and nori sheet.
