Tips from the bar
Do’s
>> Chill everything: Freeze the glass for a few minutes; keep gin and tonic in the fridge
>> Use lots of ice. Fill the glass to the brim with hard ice cubes. More ice prevents watery dilution
>> Keep the ratio simple Start with 1 part gin to 2-3 parts tonic. Adjust to taste
>> Pour tonic gently. Add it slowly down the side of the glass or over a bar spoon to preserve the bubbles
>> Stir once, lightly to combine without killing the fizz
Dont’s
>> Drown the gin in tonic. If it tastes flat or bitter, the balance is off
>> Stir vigorously or shake it. You’ll lose carbonation and the drink will go flat
>> Use warm tonic or a room-temperature glass
>> Over-garnish
