Apple Pie Waffles
Ingredients
>> 1 cup flour
>> 1/2 teaspoon baking powder
>> 1/4 teaspoon baking soda
>> 2 tablespoons condensed milk
>> 2 tablespoons milk powder
>> 1 tablespoon corn flour
>> 1/4 teaspoon salt
>> 3/4 cup milk
>> 1/4 cup soft butter
>> 1/2 cup powdered sugar
>> 1/2 teaspoon lime juice
>> 1 teaspoon vanilla essence
>> A pinch of cinnamon powder
For the apple topping
>> 1 apple, peeled and sliced
>> 3 tablespoons brown sugar
>> 1 tablespoon butter
>> 1 teaspoon cinnamon powder
>> 2 to 3 tablespoons chopped cashews
>> 2 to 3 tablespoons raisins
>> Whipped cream, to serve
Method
Preheat an electric waffle maker. In a bowl, combine the flour, baking powder, baking soda, corn flour and salt. In a separate bowl, mix the butter and powdered sugar until smooth. Next, add the condensed milk, milk powder, milk, lime juice and vanilla essence. Mix well.
Fold the dry ingredients into the wet mixture to form a smooth batter. Add a pinch of cinnamon powder and mix. Pour the batter into the waffle maker, ensuring each mould is filled evenly using a full tablespoon. Cook until crisp and golden.
Prepare the topping by cooking the sliced apples with brown sugar, butter and cinnamon powder until soft and slightly dry. Add the chopped cashews and raisins and mix well. Top the hot waffles with the apple mixture and serve with whipped cream.
